The main ingredients in this recipe are sweet potato, peanut butter and oats. Sweet potatoes are used in place of sugar and to add moisture to the dough. The oats are used in place of flour and apple sauce is used instead of oil. Bake them until the bottoms are slightly browned.
My son who turns up his nose at sweet potatoes loves these cookies and has no idea sweet potato is used as one of the ingredients.

2 cup oats, divided
2/3 cup brown sugar
1 large sweet potato
1 cup chunky peanut butter
5 Tbsp applesauce
Preheat oven to 350F.
Ground of 2/3 cup of the oats in a food processor or magic bullet to make a flour. Add the brown sugar. Scrape out the insides of a freshly cooked sweet potato and add to the flour/brown sugar mix. Mix with blender or food processor until smooth. Add rest of the oats, peanut butter and applesauce. Mix all until a thick dough is made.
Roll dough into balls and place onto a nonstick cookie sheet. Press down the dough balls with a fork. Bake cookies for 8-10 minutes. Remove from the oven when the bottom of the cookies are golden brown. Will make about 2 dozen cookies.
