If you are looking for a topper for rice, pasta or your favorite salad, this seafood recipe is light and nutritious. I added it to a batch of Asian rice noodles, and it tasted fantastic.
1 lb Scallops
12 ozs mussels
1 small red onion – sliced
Juice from 1/2 small lime
Juice from 1/2 small lemon
2 cloves garlic
Small bunch of kale
Coat bottom of pan with olive oil and set heat to medium. Add onion, garlic and mussels and sauté about 10 minutes, stirring frequently.
Add lime and lemon juice along with scallops to pan and cover. Stir occasionally until scallops are nearly done, about 8 minutes.
Add kale to mixture, stirring until well mixed and kale starts to soften (about 2-3 minutes).
Use to top rice, pasta or your favorite salad.
